I have tried multiple ways and have had to restore to a fresh ubuntu download due to an internal issue i caused. If someone could please give me a link to a step by step guide that would be amazing.

You are going to need some experience with Linux and Wine at the least Linux experience.
The easiest way and the only way you are NOT going to run into issues is by running a VM (virtual machine) inside Ubuntu with Windows on it.
BYOND doesn't always play nicely with Wine ..
