I have an otherwise good theory that breaks down with the word "cook."

Other than that stand-out, all of the words have at least two letters in common with "American." Throw out a few more words, and the remaining have at least three letters in common.

Am I at least on to something?

You're on the right track looking at word compositions. Here's a big whopping hit: instead of looking for the letters in American, try looking in America.

I'm thinking postal codes... dunno for sure, but it seems that every word on this list can be spelled using a combination of two-letter state abbreviations. Unfortunately, I'm pretty sure "NK" is not a state abbreviation, so "mink" throws that theory off pretty badly.

Whoops... mink wasn't supposed to be on the list. And it isn't, look again!

Whoops again... I just remembered why I put mink on the list. When I first conceived of this puzzler, the question was going to be, "In what way are all but one of these words uniquely American, and which word is that one?" I didn't have my computer when the idea hit me, though, and I only wrote down the words, not the question.

LOL... reminds me of that old "Cheers" episode when Cliff was on Jeopardy. In Final Jeopardy, the "answer" named three historical figures or something (forget who), Cliff bets all his money, and loses it by giving the response "Who are three people that have never visited my kitchen?"

In other words, correct, but wrong!
